CREAM
SAUCE
For the Smoked Salmon Ravioli
6 Tbsp fresh cream or sour cream
1 Tbsp fresh lemon juice
1 Tsp grated lemon zest
1 Tsp minced fresh chives
1/4 Tsp salt
1/4 Tsp fresh ground pepper
In a medium bowl, whisk together the fresh cream or sour
cream, lemon juice zest, chives and salt and pepper.
Garnish your ravioli with lemon and chive shavings.
Serve at room temperature.
For extra special effect, sprinkle with caviar or pink
salmon roe.
